I grew up watching my parents run their own restaurant, so it was natural for me to want to continue the tradition. I guess you could say it was in my blood. For some reason, that’s not where my life led me. I spent most of my young adult years in the Biotech industry and was working in biopharmaceutical development before my long-lost dream caught up with me. About five years ago, I decided to make that dream come true. My vision was to make the best-charbroiled chicken anywhere. My passion, combined with my science background, led me to Peru. I knew it would take research to accomplish my goal, so I packed up my bags and moved there for a season. I lived in a small town close to Machu Picchu, which is set high in the mountains in the southern part of the country. It was not difficult to make friends there, and I found one who offered to take me on as an apprentice and teach me the authentic Peruvian methods of cooking with lump charcoal and the traditional seasonings. He generously provided me with the skills and knowledge I needed to bring this flavorful cooking style back to the US. I spent months perfecting my own recipe and tracking down a source for the 16 herbs and spices that contribute to the magic of this chicken. The chicken takes a full three days to prepare and season. Then it is slow cooked over real wood lump charcoal. Finally, it was time to find a place where I could make my restaurant dreams come true. I found a fantastic place in Arlington, VA, and the deal was almost final when a friend told me to wait. He said he knew a perfect location in Damascus, MD. He said it was a small town with an active community, and thought my restaurant would be a welcome addition. So, here we are, and what great support we’ve had from the time I put my sign up! Our goal is to offer the best authentic Peruvian food available anywhere, and to be an integral part of this tight-knit community. We offer a variety of cuisine besides chicken, and will be expanding the menu in the near future. We have a selection of ice cold draft beers, as well as red and white wines to enjoy with your meal. KWC, inc is a family owned and operated construction firm specializing in Kitchen and Bath Remodeling. We also supply & install cabinets and/or ctops or just supply the cabinets if you have your own installer. In addition, we do certain kinds of home repairs & other work on occasion. We have been in business since 1976 when Ken realized he had more work than he could handle doing carpentry on the side while working for a builder. He quit his day job and Ken Watkins Carpentry was started specializing in carpentry and trim work. In July of 1978, we incorporated under the name of KWC inc. Kathy continued to work her day job while managing the books, ordering materials & calling customers. By the mid to late 1980’s, most of our work had evolved into custom cabinetmaking which is the field that Ken grew up in, working part time at his dad’s cabinet shop and gaining much experience there. From cabinetmaking, we evolved into remodeling, specializing in kitchen’s and bath’s. Our first shop outside of our house was a rented bay on Airpark Dr in the Montgomery County Airpark in Gaithersburg, MD. From there, we rented shops on Mooney Dr & Beechcraft Ave, both on the outskirts of the Airpark. After our move to Beechcraft Ave, Kathy quit her day job & went to work full time managing the office, books & showroom in the new building. With the extra space, we were able to outfit a nice showroom, have 2 offices and more equipment to manufacture cabinets & ctops. We also added more employees to work in the shop & to install our products. In the early 1990’s most of our work was commercial, outfitting many doctor’s offices w/custom cabinets. Eventually, the commercial market dried up & we moved into residential, which is mostly what we do now. With the advancement of stock cabinets and the influx of the big box stores, it was no longer cost effective to continue building custom cabinetry so we started buying most of our cabinets & ctops from manufactures and suppliers. During the great recession of 2008-2009 & beyond we decided we could serve our customers better without all the shop overhead and moved out April 30, 2009. Ken & Kathy Watkins, the owners of KWC, are personally on the job every day & do most of the actual labor. Even when a sub is required, we are either there with them or will usually stop by the job to make sure everything is going as planned. We have known and worked w/our subs for many years & are familiar w/their work ethic and quality, which is very similar to ours. We take pride in keeping a clean and safe work environment and running the job on time and within budget. We put down drop cloths to catch the dirt & debris and put up plastic when required to control the dust. We vacuum, put away the tools & materials daily to keep the job site clean.
